Apple's RAM is different from a PC. It uses Unified Memory that's on the same chip as the CPU so the ram is multitudes faster and far more capible than normal separate system RAM. It really depends, MacOS takes much less space compare to Windows 11. For reference, I have an 2018 MBP, macOS takes 12GB and applications takes 65GB. So if you are not using the laptop for storage purpose, 256G is likely enough.
